Quick and Easy Meatloaf

Goes together fast, with no chopping!!

Sorry, I'm not more specific on amounts. If you've made meatloaf before, you probably free hand like I do. Feel free to customize to suit your family.
Goes together fast, with no chopping!!

Sorry, I'm not more specific on amounts. If you've made meatloaf before, you probably free hand like I do. Feel free to customize to suit your family.

Number of Servings: 6

Ingredients

    1 lb lean ground beef
    1/4 cup thick and chunky salsa (we like Taco Bell; use more if needed)
    1 packet regular instant oatmeal (more or less, I used a packet to calculate calories)
    ketchup to cover
    salt, pepper and other herbs to taste

Directions

Preheat oven to 350
Line a cookie sheet with foil
Mix beef, salsa, and oatmeal in a large bowl along with salt, pepper, etc
Shape into loaf on the foil lined cookie sheet
Bake uncovered for 30 minutes
Cover top with ketchup, place a foil tent over the whole thing.
Finish off another 15 minutes or so
