Hamburger Vegetable Soup

Ingredients

    1 1/2 lb. ground sirloin
    2 c. diced onion
    1 c. diced carrots
    1 c. diced celery
    1 bag frozen mixed vegetables
    3 cloves garlic, minced
    3 (14.5 oz. ) cans beef broth
    1 (15 oz.) can crushed tomatoes
    2 Tbsps. Worcestershire sauce
    1 tsp. hot pepper sauce
    1/4 c. light butter
    1/2 c. flour

Directions

In large pot, cook beef, vegetables & garlic over medium heat until meat is no longer pink and vegetables are tender. Drain. Stir in broth, tomatoes, Worcestershire, and hot pepper sauce. Bring to a boil. Reduce heat, cover & simmer for 15 minutes.

In another saucepan, melt butter over medium-low heat. Stir in flour until smooth. Cook & stir for 6 - 8 minutes or until mixture turns golden brown. Slowly stir some hot broth from soup into roux to thin out. Carefully stir into soup stirring constantly to avoid clumping. Cover & simmer for 15 minutes, stirring occasionally.
