No-fat Bean Soup

Introduction

Basic white bean soup. Dress it up with turkey bacon or low-fat ham for a bit of extra flavor. I usually use vegetable bouillon, but ham or chicken will work. Basic white bean soup. Number of Servings: 8

Ingredients

    White beans - 2 cups
    Water - 8 cups
    Onions - 1 small, chopped
    Carrots - 1, chopped
    Celery - 1 stalk, chopped
    Garlic - 1 clove, minced
    Bouillon - Veggie 2 tsp
    Salt - 1 tsp
    Pepper - 1/4 tsp

Directions

Sort and rinse beans. Add water and bring to a boil, covered. Allow to sit for an hour.

Prep vegetables while the beans rest. Set heat to medium, add vegetable, bouillon, salt, and pepper. Bring to a boil, cover, and reduce to simmer.

Makes 8 1-cup servings.
