One small head of savoy cabbage, shredded 8 oz. box of fresh mushrooms, sliced One medium onion, sliced Two cloves of garlic, crushed One cup of matchstick carrots Two Tbsp. Olive oil or vegetable oil salt & pepper to taste
Saute onions in olive oil until wilted, add garlic and cook for another few minutes. Add mushrooms and carrots and cook for about 5 minutes or until mushrooms start to cook down a bit. Finally, turn heat down to medium low, add the cabbage and about 1/4 cup of water. Cover and sweat the cabbage for about 10 minutes until it starts to wilt down a little bit. Give it a stir, take the lid off and let the water cook out a bit. Add salt & pepper to taste. You do need to keep your eye on this so that you don't cook the liquid out too quickly and burn the veggies. I had this from a hot bar at a local store and went home and made it myself! I consider a serving to be approximately one cup.
