Grilled Bean Burgers

Introduction

This is the best vegetarian type burger I have ever had. If you like beans and you like a little bit of mexican flavor you will like these. This recipe came from the light & healthy cooking website. Ingredients

    1 large onion, finely chopped
    4 garlic cloves, minced
    1 T Olive Oil
    1 medium carrot, shredded
    2 tsp chili powder
    1 tsp ground cumin
    1 can (15oz) Pinto beans, rinsed and drained
    1 can (15oz) Black beans, rinsed and drained
    1 1/2 cups quick cooking oats
    2 T soy sauce
    2 T dijon mustard
    1 T ketchup
    1/4 tsp pepper

Directions

In a large nonstick skillet coated with cooking spray, sauce onion and garlic in olive oil for 2 minutes. Stir in the carrot, chili powder, and cumin; cook 2 minutes longer until carrot is tender. Remove from heat and set aside.

In a large bowl, mash the pinto and black beans. Stir in the oats. Add the mustard, soy sauce, ketchup, pepper and carrot mixture and mix well. Shape into 3 1/2 inch patties and place on a grill rack lightly coated with cooking spray, cook over medium heat for 4-5 minutes on each side. I usually cook mine in a frying pan on the stove over medium high heat until it starts to brown.
