Orange Chicken

Introduction

Panda Express-style Orange Chicken, created by my own experiments Panda Express-style Orange Chicken, created by my own experiments
Number of Servings: 2

Ingredients

    1 chicken breast, skin and bone removed
    3 oranges, peeled, save peels
    2 tbsp soy sauce, separated
    1/2 tbsp olive oil
    1/4 cup cornstarch
    2 tbsp ketchup
    2 cup brown or white rice

Directions

Mix orange peels, 1 tbsp soy sauce and marinate chicken overnight. Coat chicken with cornstarch and cook in skillet or wok with olive oil. While cooking, mix juice from oranges, ketchup, and remaining 1 tbsp soy sauce. Remove chicken from the wok when done and simmer the sauce until it reaches a light boil, then add the chicken back in and mix. Serve over hot rice with some nice steamed veggies.
