Spicy Chicken

Introduction

I cook this in the slow cooker all day and then it's ready when we get home. It makes the house smell great and it's easy.
I cook this in the slow cooker all day and then it's ready when we get home. It makes the house smell great and it's easy.

Number of Servings: 8

Ingredients

    4 chicken breasts (boneless, skinless, trimmed)
    1lb blackeye peas cooked and drained
    1 16oz jar salsa verde (herdez)
    2cups ripe cherry tomatoes halved
    1cup frozen corn kernels
    2Tbs Chili Powder
    1cup fat free sour cream

Directions

Mix all ingredients minus sour cream in the slow cooker. Cook at 200 degrees all day or for at least 5 hours. Add sour cream befor serving.

I like to shred the chicken once it's in my bowl to make for a very hearty stew or tortilla stuffing.

Serving size: 1/2 breast and 1cup sauce
