IntroductionMade w/ Soy Sausage Made w/ Soy Sausage
2 LARGE portabella mushrooms
1 small can of mushroom pieces-chopped
3/4 tube of Gimme Lean Soy Sausage
4 cloves garlic
1/2 small onion-chopped
1 stalk celery-chopped
1/2 bell pepper (red adds color)-chopped
1 (10 oz) box frozen spinach, defrosted and squeezed dry
3 oz. stuffing cubes
1/2 cup grated parmesan cheese (or low-fat grated parmesan cheese)
saute portabella's using non-fat spray and season w/ salt/pepper 5-7 min. both sides until just tender. put on non-stick cookie sheet.
saute "sausage" 3 min. add all veggies and saute another 3-5 min.
stir in stuffing and cheese mix until moist. stuff portabella's and bake 6-8 minutes.
each mushroom serves 2.
