GF Blackened Tilapia

Gluten free does NOT mean boring! This is tilapia with a kick! Super easy and quick to make. Tastes great with clarified butter, for those sensitive to dairy. Gluten free does NOT mean boring! Number of Servings: 2

Ingredients

    2 4oz tilapia filets

    1tbsp clarified butter (or unsalted butter)

    Rub:
    1tbsp paprika
    1tsp salt
    1tsp lemon pepper
    3/4tsp garlic
    3/4tsp red pepper
    1/2tsp dried thyme
    1/2tsp dried basil

Directions

0. Open all windows in the kitchen to ensure sufficient airflow. Blackening can produce a LOT of smoke.

1. Mix all rub ingredients in a small bowl.

2. Heat a skillet over high heat for a few minutes. Meanwhile...

3. Melt clarified butter and brush over both sides of tilapia filets. Coat both sides of the filets with the rub mix.

4. Place the the filets in the skillet and fry for 3 minutes on high. Flip the filets and fry for another 3 minutes. If the filets flake easily with a fork, they are done. If not, flip them again and fry for another 2 minutes.

Makes 2 servings. Serve with rice or veggies.
