Cauliflower Soup-light

Introduction

This recipe came out a one day challenge to swap recipes. Couldn't find it and made a minor change so am entering here. This recipe came out a one day challenge to swap recipes. Couldn't find it and made a minor change so am entering here.
Number of Servings: 4

Ingredients

    5 1/2 c caulifower florets
    2 cups water
    1 tsp salt
    2 tsp olive oilmargarine
    1 large onion, diced
    2 tsp flour
    1 bouillion cube chicken flav.
    1 cup 2% milk
    1 tsp white pepper


Directions

In a four quart saucepan combine cauliflower, water and salt. Bring to boil, reduce heat and let simmer until cauliflower is tender. Allow to cool slightly, transfer 2 cups cauliflower including any cooking liquid to blender and process until smooth, repeat two cups at a time until it is all processed set aside. In the same saucepan heat margering over med heat until bubbly and hot, add onion and saute until translucent. Sprinkle with flour and boullion cube stir quickly to combine cook stiring for one minute.
Gradully add milk and cook stirring constantly until flour mixture is completely dissolved and liquid thickens, stir in pureed cauliflower.
Reduce heat and let simmer until heated through, stir in pepper. Ladle into four soup bowls.
