Spinach-Veggie Pizza

Introduction

Weight Watchers "Simply The Best"
One of my favorites. I slice the pita open and use 1/2 to cut the carbs. I also add other vegetables to the saute.
These pizzas freeze well and no thaw time needed, just a couple extra minutes in the oven

Number of Servings: 4

Ingredients

    1/2 10 oz package frozen chopped spinach, thawed and squeezed dry.
    1 C. non fat ricotta cheese
    2 garlic gloves, minced
    1 tsp dried basil
    1/2 tsp dried oregano
    2 tsp olive oil
    1 medium zucchini, sliced
    1 red bell pepper, seeded and cut into thin strips
    1 onion, thinly sliced
    4 large whole-wheat pita breads
    1/2 C. tomato sauce (low salt if preferred)
    1 C. shredded part-skim mozzarella cheese

Directions

Preheat oven to 400 f
In a medium bowl, combine the spinach, ricotta cheese, garlic, basil and oregano.
In a large skillet, heat the oil. Add the zucchini, pepper and onion; cook, stirring as needed, until tender-crisp, about 4 minutes
Arrange the pita breads on a nonstick baking sheet. Spread 1/2 c. spinach mixture over each pita; top each with the tomato sauce and sauteed vegetables. Sprinkle with mozzarella. Bake until heated through and the cheese is melted, about 15 minutes.
Makes 4 pizza's
