Eggplant, 1 peeled
Onion, 1 large
Tomatoes, 2 large
Red pepper, 1
Garlic, 5 cloves
Olive Oil, 1/3 cup
Thyme, ground, 1 tsp
Drizzle the olive oil over the vegetables (be generous!)
Add the garlic and the thyme, mix well
Cook in a slow cooker for about 7 hours on low.
You can freeze it if you don't want to eat it all the same day.
Makes about 6 portions of 3/4 -1 cup (depending on the size of your vegetables)
