1 Bell pepper,
Salsa, (I used Medium and included Frank's Red Hot and Taco Bell Fire but this is to taste, go as hot or mild as you wish)
(You can substitute less cheese, use low fat cheese, or even omit it to lower the fat content)
Then mix the 2 eggs in a small bowl (I used a little salt and pepper to season), then pour it into the pan.
After the eggs start cooking, add the veggies.
Letting that cook for awhile, then add the salsa.
Right before it's done cooking, add the cheese.
*Omiting the cheese makes this recipe have only 10 grams of fat!!
