1 large stalk broccoli 1 onion, chopped 1/4 cup long-grain rice 3 chicken broth OR 1 (10oz) can condensed chicken broth + 1 3/4 cup water 3 cups milk (1%) pinch of hot pepper flakes salt & pepper to taste up to 2 Tbsp lemon juice if desired
Cut broccoli stalks from tops; peel fibrous outer layer from stalks & chop coarsely. Cut off flowers and put aside. In a pot combine stalks, onion, rice, hot pepper flakes, and stock. Bring to a boil over high heat. Reduce heat, cover and boil gently for 10 min. or til rice is almost tender. Add flowers and cook, covered for about 5 minutes or just until broccoli is tender. Stir in milk. Heat over med-low heat, stirring often, just until it's steaming. Do not allow to boil. Season as desired. Sprinkle each serving with grated old cheddar cheese.
