Basil and Tomato Pasta

Introduction

This is a great summer vegetarian one dish meal. This is a great summer vegetarian one dish meal.
Number of Servings: 6

Ingredients

    4 cups tomatoes, chopped
    8 oz low fat cream cheese
    1/2 cup sun-dried tomato vinaigrette dressing
    1/2 cup fresh basil, chopped
    16 oz whole grain pasta, cooked
    3 oz pine nuts, toasted

Directions

Toss tomatoes with cream cheese and dressing, cover and refrigerate for at least two hours. Cook pasta as directed and place in a large bowl. Toast pine nuts in a 350F degree oven for 3 minutes, watching them closely so they do not burn. Add tomato mixture and pine nuts to pasta and toss lightly.
