Ingredients

    2 meduim eggs
    .12 c carrots grated
    .12 c mushrooms canned
    .12 c red tomato chopped
    1 tbsp green pepper chopped
    .12 c chedder cheese grated
    dash of salt and pepper

Directions

Scramble the eggs, salt, and pepper. Pour into a small sauce pan. Add remaining ingredients, except cheese. Place lid on pan and let egg cook though. Once egg is set top with cheese. Let the cheese melt. Serve with toast (which isn't in nutrition information). Makes 1 serving.
