Crunchy Curry Coleslaw

Ingredients

1 TBS cider vinegar
1 cup light mayo
1 TBS yellow curry
1 tsp. salt
1 tsp black pepper
1/2 head cabbage, shredded
1 stalk celery, diced small
1/2 cup onion, diced small
1/2 cup raisins, packed (golden or brown)
1 large carrot, peeled and grated
1 green apple, small cubes (peel if you prefer)
You may also add a shredded summer squash or small zucchini, if you like. This makes it moister and adds vitamins!
Directions
Mix mayo, curry, salt, pepper, splenda, and vinegar in bottom of large mixing bowl. Add vegetables and stir to coat. Chill.
Use soy mayo to make it vegan, or cut mayo to half a cup to reduce calories.

This was divine, I did do a few variations, I used the dole bag mix of coleslaw, I used malt vinegar instead of the apple cider vinegar,I did not add the onion,I put in the zest and juice of one lemon,I grated in the apple insteaded of chunking it. I love the spices, and this one is a keeper! - 8/27/09
