Introduction

My family loves this simple but delicious gumbo recipe. We never have leftovers. My family loves this simple but delicious gumbo recipe. We never have leftovers.

Ingredients

    Chicken Thigh, 2 thighs, boneless

    Louis Rich Turkey Smoked Sausage, 2 cups, cut into 1 inch slices

    Canned Diced Tomatoes, 1 can

    Swanson Chicken Broth 99% Fat Free, 3 cup

    Water, 5 cups
    Okra, frozen/raw, 1 cup slices

    Onions, raw, 1 cup, chopped

    Green Peppers, 1/2 cup chopped

    Brown Rice, long grain, 1 1/2 cups uncooked

    Oregano, ground, 1 tsp

    Red Pepper Flakes, 1/2 tsp

    File' Powder 2 tsps

    Garlic, 1 clove minced

    Celery salt, 1 tsp

    Salt and pepper to taste.

Directions

Cut up all your veggies and the sausage links. Set aside. In a slow cooker or crockpot put the 3 cups of broth and the 5 cups of water into the pot. To the broth add the chicken thighs as is. They will become pieces as it cooks and gets stirred. To that add tomatoes, onions, bell pepper, red pepper flakes, garlic, oregano, fille powder, and celery salt. Turn on low and let cook for 5 hrs. At the end of 5 hrs stir and break up chicken. Then pour in the 1 1/2 cups of brown rice and okra. about 20 minutes until it is done stir in sausage. Stir and serve. Yummy!

    Very good! My entire family loved it! It's incredibly aromatic, so tasty, and when there is a crock pot involved, it's so simple. I found that the recipe yields MANY more than 6 servings. - 9/29/09

    I also loved this recipe. However, my rice did not cook either. So, I removed it to stove and the rice cooked in a very short time. - 9/14/08

    Hmmm. Maybe putting the rice in sooner would help or cooking the whole thing on high. I know for my slow cooker it only takes about an hour. A friend said that some crock pots differ in time and temp. I don't know? I cooked it last weekend and it worked.

    So far smells great. But, how long is it supposed to cook AFTER adding the rice? I added the rice two hours ago and it's still not done; this is after I turned it up to high over 3 hours ago. (4 hours into the cooking time). The recipe doesn't address that. - 9/11/08

    Generally it only take about an hour for it to cook after adding the rice. Hmmm not sure why yours wasn't done after two?

    It is a cajun seasoning you can normally pick up at in the spice isle in the local grocery store. It makes the dish!

    This is very good, I did add the rice earlier and cooked it for 1 1/2 hours. However, I think the nutrition information is a bit off, since 1/4 c uncooked brown rice is 150 calories. Maybe the database is a bit off? Or the calories are for 1 1/2 cups cooked brown rice? Either way, yummy meal! - 10/17/08

    Very good! We used chicken sausage because we couldn't find any turkey but otherise the same recipe. Of course, I had to add a healthy dose of Louisiana Hot Sauce on my serving! I would recommend this recipe. - 9/8/08

    I think she meant file powder

    Gumbo file powder is a necessity for cooking authentic Cajun cuisine. Quite simply, gumbo file powder is the powdered leaves of the sassafras tree. When ground, they smell somewhat like eucalyptus or juicy fruit gum.

  • I nor my family like okra I substituted baby carrots because that's what I had. The canned tomatoes I used no salt diced tomatoes and Swanson organic vegetable broth. Cooked the rice. With saying that I was able to cute the sodium by almost 200 mg My family loved it. - 8/26/14

  • Loved this ~ Used 3 chicken breast. Used all chicken broth instead of any water. Used lots of onion and green pepper, next time I will add celery. Rice takes about an hour. Can always season to taste by adding more red pepper. Very nice on a cold day. - 11/23/13

  • Very impressed! Was very pleasantly surprised. The only thing I changed was I used veg broth, a fresh chopped jalapeno, Jalapeno chicken sausage, and I added mushrooms. The flavor was wonderful and very satisfying. I used wheat long grain rice, took extra time to cook. - 9/23/13

  • I need to make some changes - I'm going to lessen the amount of liquid - it was too soupy. And I'm going to increase the spices a bit. I also had trouble with the rice not cooking - I will use much less rice next time too. I agree it should have been 1.5 cups of cooked rice, not uncooked rice. - 5/2/13

  • This looks great. I'm going to try it with a few tweaks. I will say that the calories are quite a bit off though, the calorie count given is for cooked rice not UNcooked (about 220 cal cooked vs 620 cal for raw). - 4/8/13

  • The directions for this recipe are terrible. It took 3 hours for the rice to cook! You should mention that. I haven't tasted it yet because it got too late. It was a very disappointing evening when it came to dinner tonight. :( - 4/3/13

  • My six qt slow-cooker could only handle 3 cups of chicken broth. I left out the water. With all the other ingredients, it's full to the brim. Didn't have sausage, so used mini smoked hot-dogs (we'll see if that works out). It smells great, though! - 11/4/12
