Ingredients

    1 Box Betty Crocker Low-Fat Fudge Brownie Mix
    1 15 oz. Libby's Canned Pumpkin
    Cooking Spray

    optional- semi-sweet chocolate chips.

Directions

Makes 12 regular sized muffins or cupcakes.

Preheat oven to 350.

Blend the canned pumpkin with the brownie mix in a large bowl. The batter will be thick, leave it alone!

Spray the muffin pan.

Spoon the batter into the pan.

Optional- Top each cupcake with 5 semi-sweet chocolate chips for an added 11 calories.

Bake for 20-25 minutes.

Aproximately 181 calories, 3 grams of fat.

  • I love that this only uses 2-3 ingredients. Suggestion...try No Pudge Fudge Brownies...they are sinfully good and are fat free. When making those brownies you use vanilla yogurt or plain yogurt with a little vanilla extract. Not sure if you'd have to adjust your recipe slightly for it. - 11/26/08
