Wheat Bran- 1/4 cup
Oats, Whole Grain, Ground- 1/2 cup
Flour, White- 1/2 cup
Baking Powder- 1/2 tsp
Salt- 1/8 tsp
Cinnamon- 1 tsp
Carrots, Shredded- 1 cup
Ener-G Egg Replacer- 2 servings
Cottage Cheese, Lowfat- 1/4 cup
Sugar- 3/4 cup
Applesauce, Unsweetened- 1/4 cup
Mix dry ingredients together first (including salt and cinnamon).
Beat egg substitute in med bowl.
Add Sugar, Applesauce, Cottage Cheese to Egg and mix.
Add carrots and dry mixture and mix on high for about a minute.
Grease muffin tin (or use cupcake liners) and put batter in.
Bake for 20-25 min.
