Santa Fe Chicken

Introduction

Trying to clean out the cupboards and made this tasty southwestern delight. Trying to clean out the cupboards and made this tasty southwestern delight.
Number of Servings: 4

Ingredients

    2 skinless Chicken Breasts (approximately 12 oz)
    1 cup salsa
    2 cups canned Black Beans
    2 cups yellow sweet corn
    1/2 cup 2% Shredded Cheddar Cheese

    Optional additional ingredients, not counted for nutritional purposes:
    Cooking spray or butter/oil
    Sour cream
    Brown rice
    Favorite southwestern spices (McCormick Santa Fe mix is yummy, contains chili, cumin and garlic)

Directions

Spray a little bit of cooking spray into a pan
Sprinkle preferred spices on chicken
Cook the chicken until lightly browned--about 10-15 minutes, on both sides
Add salsa, corn, and black beans
Cook until chicken is thoroughly cooked (I used a meat thermometer--check to be sure juices run clear when chicken is sliced
Sprinkle cheese on top of chicken and let melt before serving

I served over brown rice, and "splurged" with 1 T of sour cream on the side. Enjoy! ;)
