Butternut Squash Soup

Number of Servings: 4

Ingredients

    1 tsp Olive Oil
    1 Cup Chopped Onion
    3 Cups Diced Butternut Squash (Peeled)
    1 Cup Diced Carrots (Or Baby Carrots)
    4 Cups Low Sodium Chicken Broth
    1/2 tsp Salt &Pepper
    1/2 tsp Ground Sage
    1/4 tsp Cinnamon

Directions

Saute onions in the olive oil in a pot big enough to hold everything. Add remaining ingredients and bring to a boil, reduce heat. Cover and simmer until tender. Use a blender or immersion brlender to puree the soup to your liking.
Makes 4 1 1/2 Cup servings.
You may add some more broth if it's too thick and simmer longer if it's too thin.
