Cashew & Coconut Energy Bites

Introduction

Number of Servings: 36

Ingredients

    2 cups unsalted cashews
    2 cups pitted dates
    1/2 cup shredded unsweetened coconut

Directions

Place cashews into food processor and pulse until they are ground. Add shredded unsweetened coconut to food processor and pulse until ground. Make sure the dates are chopped fairly small as they will gum up the food processor when put in whole. Add small amounts of dates to the processor and pulse until the mixture is moist and pliable. Take a tablespoon or so and roll into round balls. Serving size is three "Bites". We keep ours in the refrigerator.
