Tropical Chicken Sausage and Onions

Introduction

Mango chicken sausage with grilled onions, garlic, and pineapple. Best served with rice. Very quick dinner or lunch. Mango chicken sausage with grilled onions, garlic, and pineapple. Best served with rice. Very quick dinner or lunch.
Number of Servings: 1

Ingredients

    1 link of Chef Bruce Aidells Mango Chicken Sausage*
    .5 cup of chopped onions
    1 clove of garlic
    .25 cup of pineapple chunks (reserve some of the juice)

    *If you can't find that brand of sausage, you can use a non-flavored sausage link in place of it and add .25 cup of sliced mango fruit to the recipe.

Directions

Chop onions, press/mince garlic, and slice sausage
Spray a pan with cooking spray and grill onions and garlic
Remove onions and garlic from heat and place onto a plate
Brown sausage in the pan
When sausage has browned, add the pineapple to the pan and pour pineapple juice over the sausage and pineapple
Add the onions and garlic back to the pan
Remove when heated thoroughly and serve over rice.
