Introduction

This is a recipe that I have added to over the years, it came from a friend of my Moms many years ago, Thanks Opal, it's always been a crowd pleaser. This is a recipe that I have added to over the years, it came from a friend of my Moms many years ago, Thanks Opal, it's always been a crowd pleaser.
Number of Servings: 6

Ingredients

    1 lb lean ground turkey
    1 cup chopped onion
    1 cup chopped green pepper
    1 can diced Tomatos
    1 cup beef consomme
    1 sm can chopped black olives
    1 can sweet corn with liquid
    1 cup long grain rice
    1 cup shredded low fat cheddar cheese
    1 tbsp chili powder ( or to taste)
    !/2 tsp salt
    Garlic to taste
    1 tsp Cumin

Directions

In large skillet brown ground turkey. When browned add chopped onion and green pepper, saute till onion is translucent. Add chili powder, salt, cumin and garlic. Add tomatoes, consomme olives and corn, bring mixture to a boil, add rice, bring back to a boil.
Pour mixture into 3 qt covered casserole, Bake covered at 350 for 35 minutes, remove cover, top with cheese and cook for 10 additional minutes.
