Number of Servings: 7

Ingredients

Chicken Breast. I use a family package of 5 breast about 4.5lbs. It makes about 35-40 pieces depending on size and shape.

Progresso Bread Crumbs - Italian Style. 4 cups is what I start with. You will only use in the finished chicken about 3 Cups.

Egg. 2 eggs is what I start with. You will only use in the finished chicken about 1 egg.

Milk, nonfat. 1.5 cups is what I start with. You will only use in the finished chicken about 1/2 cup.

Crisco Pure Vegetable Oil. 4 cups is what I start with. You will only use in the finished chicken about 1/2 to one cup.

Directions

Mix milk and eggs in one bowl. Place bread crumbs in another bowl. Cut up the chicken breast into strips or chucks. Place a couple of cut pieces into the milk/egg mixture and soak for a couple seconds. Take chicken out of mixture and place in breadcrumbs. Roll around until completely covered. Do this until all chicken is breaded.

Heat oil on stove. When the oil sizzles when daps of water hit the oil, it is ready. Place chicken into pan. Put only enough so that the bottom of the pan is covered. Cook for about 10 mins... you can flip the chicken or cook just from the one side. Take on piece of chicken out, cut it open make sure it is cooked all the way. Take chicken out of oil and place in a bowl that has a paper towel under it to catch and remove excess oil. Repeat the oil process until all chicken is cooked.

You will have left over oil, milk/egg mixture, and breadcrumbs. This nutritional information might be off due to that.
