Springfield Chili (cooking light)

Introduction

Number of Servings: 6

Ingredients

    2 1/4 C chopped onion, divided
    4 Garlic cloves minced
    1 lb ground turkey breast
    1/2 lb ground serloin
    1 (12 oz) can of lite beer (bud light ect)
    3 Tbsp chili powder
    1 tsp worcestershire sauce
    1/2 tsp kosher salt
    1/4 tsp ground cumin
    1 (14 1/2 oz) can diced tomatoes, undrained
    1 (8 oz) can no salt added tomato sauce
    1 (15 oz) can pinto beans, drained and rinsed
    1/2 cup (2 oz) reduced fat cheddar cheese (to top chili if desired)

Directions

Saute onion in dutch oven over medium heat with a touch of olive oil till transparent. Stir in garlic, cook 1 min.
Increase heat to med high, add ground turkey and serloin to pan. Cook 5 min or until browned, stirring to crumble. Add beer, cook till liquid is reduced to 1/3 cup (about 9 min). Remove from heat.
In crock pot combine chili powder, Worcestershire, kosher salt, cumin, diced tomatoes, tomato sauce and pinto beans. Stir well, add turkey serloin mixture and stir well. Cook on high 2 hours, and then on low until ready to eat. Top with fresh chopped onion and cheese if desired. Makes 6 servings.
