Spicy jalapeno corn bread (cooking light)

Ingredients

    Cooking spray
    1 1/4 C stone ground cornmeal
    1 cup corn
    3/4 tsp kosher salt
    1/2 tsp baking soda
    1 C lowfat buttermilk
    1/2 C shredded reduced fat cheddar cheese
    2 tbsp minced pickled jalapeno peppers
    1 1/2 tblsp I cant believe its not butter spread, melted
    1 1/2 tblsp honey
    1 tblsp canola oil
    Egg beaters (equiv to 2 eggs)

Directions

Preheat oven to 375
Place a 9 inch cast iron skillet coated with cooking spray in oven 5 min or until heated. (or any other baking dish will work just fine)
Combine cornmeal, corn, salt, and baking soda in large bowl, stirring with a wisk, make a well in center of mixture. Combine buttermilk, cheese, jalapenos, butter, honey, oil and eggs in a small bowl, add to cornmeal mixture. Stir till just combined. Spoon mixture into preheated pan (or dish). Bake at 375 for 30 min or untill a wooden toothpick inserted in center comes out clean. cool in pan 10 min on a wire rack. Cut into 12 wedges, makes 12 servings.
