Soba Noodle salad

Ingredients

    1 cup sugar snap peas
    8 oz soba noodles
    1/2 English cucumber, sliced thin
    1/4 C fresh cilantro, chopped
    1/2 tsp ginger

    dressing:
    1 tsp ginger
    1 garlic clove, minced
    3 Tbsp low sodium soy sauce
    1 tbsp olive oil
    1 tsp honey

Directions

Boil water. Place sugar snap peas in water and cook 2 minutes. Rinse under cool water. Add noodles and cook 6-8 minutes. Drain and rinse under cool water. Add chopped vegetables to noodles and pour dressing over all. Mix and chill. Serve with grilled shrimp or fish of choice.
