Salsa Sour Cream Chicken

Number of Servings: 4

Ingredients

    8 chicken thighs, skin removed (or 4 boneless, skinless breasts)
    1 package dry taco seasoning mix
    1 cup salsa
    1/4 cup low-fat sour cream

Directions

Place chicken in a lightly greased shallow baking dish; season with the taco seasoning mix.

Pour the salsa over the chicken; bake at 350 for 35 to 45 minutes, or until chicken is tender.

When ready to serve, remove the chicken from the casserole, stir sour cream into salsa, then return chicken.

Serve salsa sour cream chicken and sauce with Spanish rice. (Spanish rice not included in nutritional info).

This chicken recipe serves 4.

    My husband who does not like "diet food" loved this! My kids ate and ate....Fabulous! This will definately be a staple in our diet...(I did however omit the taco seasoning and used garlic, cumin, paprika and chili instead as I have to watch my sodium) - 6/29/07

    I make this recipe very often in the crock pot. I've used chicken breasts before and thought the thighs were MUCH better. I use my own taco seasoning and homemade salsa. Sometimes I'll also add a can of black beans about an hour before we eat. Thanks for submitting this! - 5/14/10

    this is the best spanish chicken style recipe I have ever came across, it comes out so tender that you can cut it with a fork. The flavors that come together with the sour cream and salsa just blows my hubby's mind away. - 5/13/11

    Love this! It's a little spicy for my 6 year old, but it's a great recipe for dinner and then leftovers for lunch the next few days. The sour cream makes it seem decadent far beyond the calorie count would suggest. Thanks!! - 3/17/13

    This was amazing. I made it tonight, with just a little cheddar cheese sprinkled on top, served with brown rice and salad greens topped with salsa. My husband looked at me and asked, "this is healthy?!" Definitely will be making again! - 3/11/12

    Easy and delicious. I served mine with a tex mex style salad. Romaine, tomatoes, peppers, avacoda, corn black beans etc. Toasted a corn tortilla that I cut into strips was so tasty! - 8/18/10

  • I made this on the crockpot. I sprinkled the taco seasoning on top (only half pkg) and added salsa to cook. Before serving I put each breast on a plate then mixed the sour cream w/salsa and spooned over chicken. Very good, but still a little salty. I am a little worried about the sodium content. - 2/3/09

  • I used chipotle salsa and it was fabulous. FYI If you add veggies, saute them and add them in the end. They made the sauce to watery if you cook them in there. I have made this recipe several times! - 1/30/08
