Ingredients

    1 1/2 pounds ground turkey
    1/2 cup dry breadcrumbs
    1/2 cup (2 ounces) finely shredded fresh Parmesan cheese
    1/3 cup finely chopped green onions
    1/4 cup coarsely shredded carrot
    1/4 cup coarsely shredded zucchini
    1/4 cup chopped fresh parsley
    1/4 teaspoon salt
    1/4 teaspoon pepper
    1 large egg white
    2 garlic cloves, crushed
    Cooking spray

Directions

Preheat oven to 400°.

Combine all ingredients except cooking spray in a bowl; stir well. Shape mixture into 30 (1 1/2-inch) meatballs. Place on a broiler pan coated with cooking spray. Bake at 400° for 15 minutes or until done.

  • These were pretty good, though I would have added more seasonings. We baked them. Then we heated two boxes of organic chicken broth. To that we added Ramen noodles (without the seasoning packets, though we did add one), fresh mushrooms and some pepper corns. It was an awesome soup. - 1/16/09

  • These are great! I cooked them in chicken broth, added chopped up veggies, spinanch, bay leaf and small shell pasta. It made an awesome italian wedding soup. Thanks so much for sharing! - 10/14/08

  • These meatballs are delicious - and versatile. I also added spinach to mine. I had them with whole wheat pasta and low sodium teriyaki sauce for a little Asian flavor and next will have them with pasta and marinara sauce. I've also considered putting them in some chicken broth with noodles/rice. - 10/1/08

  • This was VERY good, I used this recipe with the help of my Deceptively Delicious cookbook, and pureed the carrot, and since I did not have zucchini on hand, I sauteed in PAM and then sliced up spinach-- my picky eating boyfriend had NO idea.. Oh and I am Italian too :) Very Good! - 9/23/08

  • My husband gave these a 10 out of 10! They're delicious....thanks for the great recipe! I made a huge batch...about 3 lbs of turkey, 1.5 lbs of ground sirloin and tripled all the ingredients. Served with cream of mushroom soup with a little dry onion soup mix. Can't wait for leftovers tomorrow! - 9/22/08
