Cajun Chicken Stuffed Peppers

Number of Servings: 2

Ingredients

    2 large red peppers
    1/2 lb boneless skinless chicken, cut in 1/2" pieces
    1 tsp Cajun seasoning
    2 tsp olive oil
    1/2 cup chopped onions
    2 cloves garlic
    1 1/4 cup 99% fat free chicken broth
    1/2 cup white rice
    1/4 tsp salt
    2 cups spinach leaves
    5 Tbsp fresh chives

Directions

Cut peppers in half lengthwise and clean. Arrange in 9 in pie plate, cover with saran wrap and microwave on high for 5 minutes until crisp tender; drain.

Combine chicken and cajun seasoning in bowl. Heat oil in pan over medium heat. Add chicken and saute 4 minutes until done. Remove from pan.

Add onion and garlic to pan; saute 1 minute. Add broth, rice and salt; bring to a boil. Cover, reduce heat, and simmer 15 minutes. Return chicken to pan, cover and cook 3 minutes or until rice is done.

Stir in spinach and chives. Divide rice mixture evenly between halves.

Serves 2.
