Family Chicken Soup (Mexican Style)

Introduction

This is a chicken soup I am used to eating at my house! Its super delicious! Lots of veggies, really fill you up and low in calories! My son loves this soup. Hope you like it too! Number of Servings: 6

Ingredients

    6 Chicken Thighs, skin removed
    2 c. Broccoli Florets
    2 c. Sliced carrots
    50 (approx.) Green Beans
    2 c. sliced Zucchini
    2 1/2 c. Chayote, chopped 1" pieces approx.
    8 (approx) c. water

Directions

1. Bring water to boil in a big pot.
2. Add chicken thighs and cook through.
3. Add all your veggies except for the Zuchinni.
4. Bring to medium low heat for about 10 min.
5. Add Zucchini (it gets too soft if overcooked)
6. Cook for about 3-4 minutes more, and remove from heat.

Serve and enjoy!

**Makes 6 servings (1 chicken thigh, with veggies and broth).

**Great accompanied with corn tortillas! (not included in nutritional values)
