Ingredients

    4 5oz Bonless Pork Chops
    2 Tbsp Olive Oil
    1 medium to large onion chopped
    7 garlic cloves cut in half
    3 potatoes cut in small chunks
    1 green bell pepper chopped
    3 Tbsp Dry Sherry
    1 3/4 cups Low sodium Chicken Broth
    Salt and Pepper to taste
    1 tsp ground sage
    1tsp chili powder
    1tsp white pepper
    1 tbsp ground cumin
    1 bay leaf
    1.5 cup chickpeas

Directions

Put olive oil in stew pot over medium high heat and add pork chops (cut into bite size pieces. Add salt and pepper to season pork. Let brown and then add all veggies and chickpeas (rinsed off) with a little more salt and pepper, sage, cumin, chili powder white pepper, and bay leaf. Let veggies cook down some (about 10 minutes or so) and add Dry Sherry. Let the alcohol cook out for about 5 minutes or so and then add the Chicken Stock. Let cook over Medium heat for 20-25 minutes.
