Fresh Tomato/Vegetable Gazpacho

Introduction

This is a delicious cold tomato soup that is great for those hot summer days. Also Delicious warmed up. This is a delicious cold tomato soup that is great for those hot summer days. Also Delicious warmed up.
Number of Servings: 8

Ingredients

    46 oz can tomato juice
    1 Tbsp Splenda (optional)
    1 clove garlic, minced
    3 Tbsp lemon juice
    1 tsp Worcestershire sauce
    1 medium cucumber, shredded
    1 lg bell pepper, chopped
    1 cup shredded carrot
    1 cup chopped celery
    3 Tbsp minced shallots
    2 large tomatoes, chopped
    Fresh herbs : I use thyme, basil and cilantro
    Salt and pepper to taste

Directions

Makes about 2 quarts: 8 1-cup servings

Blend together tomato juice, Splenda, garlic, lemon juice, and Worcestershire sauce. In large bowl combine vegetables and mix with blended mixture. Stir in herbs, salt and pepper.
Chill until cold, to allow flavors to blend. Serve.
