Healthy Turkey Chili

Ingredients

1 lb Ground Turkey, 93% lean
2 cups chopped onion
1/8 cup chopped green chile (hot-spicy, adjust amount according to taste)
2 cups chopped green bell pepper
1 28 oz can crushed tomatoes (low/no sodium)
2 14.5 oz cans diced tomatoes (no salt)
1 15.5 oz can white kidney beans
1 15.5 oz can red or light red kidney beans
1 1/2 cup chopped zucchini
1/8 cup chopped fresh cilantro
2-4 cloves fresh garlic (minced or pressed)
2 tbsp Hot Mexican Style Chili Powder (adjust amount according to taste)
1-2 bay leaves
Light sour cream (optional)
Light cheddar cheese (optional)
Directions
In a large skillet, sautee ground turkey, onion, and green chile until the onions are soft and the meat is browned. Add cooked meat, onions, and chile to crockpot.
Add remainder of ingredients to crockpot and cook on high for a minimum of two hours. After two hours, turn down to low for longer cooking time. Vegetables will still be a bit crunchy after two hour cook time.
Remove bay leaves and serve garnished with light sour cream and/or light cheddar.
