Make Do Stew

Introduction

Being low on groceries and looking in fridge and pantry for something to cook led to this concoction. Turned out great! The main ingredient is the tomatoes. I love cooking with with petite diced tomatoes. This could be altered by changing the other veggies or the meat but it is essential to add the tomatoes and complimentary spices. The broth for this was terrific BUT after seeing it calculated with so much sodium, I would suggest using low sodium bouillon cubes. ; ) Being low on groceries and looking in fridge and pantry for something to cook led to this concoction. Ingredients

    Leftover Spam Lite - approximately 3 oz - cubed
    1/2 small onion diced
    1 small zucchini - cut in small pieces
    1/2 cup baby carrots cut in thirds
    1 rounded tsp minced garlic (from jar)
    1 tsp chili powder
    1 tbsp parsley flakes
    1 tsp salt
    2 cans petite diced tomatoes
    2 bouillon cubes, 1 chicken & 1 beef - low sodium!
    3 tomato cans of water
    4 oz sea shell pasta

Directions

In a large pot sprayed with olive oil cooking spray, saute Spam with onions, garlic and spices until onions are translucent - if mixture starts to stick, you can add a little juice from the tomato cans.
Add zucchini and carrots and saute until partially cooked. Add bouillon cubes, tomatoes and water. Bring to boil over medium high heat and then simmer over low to medium heat for an hour to an hour and a half. Add pasta and cook for required time.
Makes 4 servings approximately 1.5 cups each.
