Yellow Corn Meal bread

Introduction

From the Albers Corn Meal box. Was a big hit with the family. The recipe called for 1/2 tsp. salt, butter and vegetable oil. I omitted the salt and used olive oil to cover both the oil and butter. Ingredients

    1 1/2 c. all-purpose flour
    2/3 c. granulated sugar
    1/2 c. corn meal
    1 tbsp. baking powder
    1 1/4 c. milk
    2 large eggs
    almost 1/2 c. olive oil

Directions

Preheat oven to 350 and grease an 8x8 pan. Combine flour, sugar, corn meal, and baking powder in a medium bowl. In a separate bowl, combine remaining ingredients. Add wet mixture to dry and stir until just blended. Pour into pan and bake for 35 minutes or until toothpick comes out clean.
