Curried Tofu Stir Fry

Introduction

This was something I just mixed up one night. The curry powder was an added experiment, and it turned out really good. For the tofu, I recommend using extra firm tofu that's been frozen and then thawed for better texture. This was something I just mixed up one night. Ingredients

    2 tablespoons extra virgin olive oil
    1 large red onion, chopped
    1 clove garlic, minced
    1 large red bell pepper, sliced
    1 large green bell pepper, sliced
    1 cup sliced mushrooms
    1 12oz. package extra firm tofu, drained, pressed and cubed
    1/2 teaspoon vegetable bouillon
    1/2 teaspoon curry powder (or to taste)
    1/4 teaspoon freshly ground black pepper

Directions

Remove tofu from packaging. Drain, and press to remove excess moisture.

While the tofu is being pressed, heat olive oil in large skillet over medium. Add onion and sauté 3-5 minutes. Stir in garlic, bell peppers and mushrooms. Cook another 5-10 minutes until mushrooms start to soften.

Take the tofu and cut into bite-sized cubes. Add to stir fry. Season with vegetable bouillon, curry powder and black pepper. Cook another 5-10 minutes or until tofu is thoroughly heated through and has had time to absorb the flavors of the vegetables and seasonings.

Makes 3 servings.
