I'm eating it right now. I left out the brown sugar and added one little packet of stevia and 3/4c. of soy milk and it was perfect. I used egg white only . I added half the raisins and a little cinnamon on top. It is delicious.
I made this again without white sugar or salt and used egg whites instead of yolks. I cut the milk to 3/4 cup. It cut the cals by almost 1/2 and the fat down to 0.3 g. It tasted just as wonderful!!! YUMMY! I don't feel so guilty eating two servings!
I am a sweetpotato enthusiast & enjoy custard. This makes a great breakfast or snack. I ve made it w/out banana, substituted milk for the evaporated, used whole eggs, & sugar substitute. Tastes great everytime! Also works well in microwave. Did you know you can microwave sweet potatoes? Saves time.
This was absolutely delicious. Very nutritious as well. Eggwhites and less sugar would lower the calories. Actually, I bet you could cut the sugar in half or eliminate it altogether. It's just on the edge of being too sweet, and both the bananas and sweet potato have enough sugar on their own.
Love sweet potatoes AND pumpkin both. Used 1/2 the sugar and no salt. Added a dash of nutmeg and mixed the spices in potato mixture--not on top; sprinkled finely chopped pecans and craisins on top. Added dash of nutmeg and cloves to pumpkin mixture with walnuts on top. Either way, it's delicious.
I made this tonight in a muffin pan without the toppings (just forgot...duh). My 3 year old son thought it was cake and loved it. And he doesn't even eat vegetables, ever! Will make this again soon and might try to mix some broccoli in with it...
As I'm typing this, I have this baking in the oven. I'm going CRAZY with anticipation in waiting to try it. If it tastes half as good as it's smelling, it's going to be a real treat for us all here!!!!
Tried w/ egg substitute and a little less 2% milk (forgot to buy evap. :) It has potential, but seemed bland to me. Next time, I think I'll add more cinnamon and mix it in directly. It was good reheated with extra cinnamon and a little bit of smart balance or neufatchel(?) cheese mixed in.
This was quite good. I goofed getting the sweet potato ready for inclusion which disrupted the texture, so I think it is actually better than it turned out for me. I used two whole eggs and 1 cup skim milk. It was a little bland, so another time I would add spice to the sweet potato-banana portion.
I made this last night. No one in my family could get past the first bite. The combo of banana and sweet potato didn't go together, in my opinion. We love sweet potato and I was very disappointed it didn't turn out.
Served this warm after dinner. My kids, with whom I have tried every tactic including pureeing, hiding, and disguising vegetables all without success, are scarfing this down as I write. I think the sweetness of the banana coupled with the irresistible aroma of the cinnamon was the hook!
I hate sweet potatoes but my DH loves them. Made this tonight and it was absolutely delicious! I would add vanilla extract. The raisins weren't half bad but I think nuts would have made this even better. Reminds me of a creamy pie without the crust. I made it in a pie pan. SF/FF Cool Whip ++
Sounds great. I can't wait to try it, especially using the suggestions from others. Will use pecans instead of the raisins and skip the sugar. Maybe use the pumpkin pie spice instead of the ginger. mmmm
Made this, leaving out the banana, and served as side dish for thanksgiving. even my husband who loves candied sweet potatoes asked me to make sure to save the left overs. I call that a 5 star review.
Great recipe. Good for using that last, turning-brown banana. This is good for breakfast, a snack or a dessert. I divided it into eight little ramekins and substituted 1% milk for evaporated. It's good warm and cold. Will definitely make this one again and mix the raisins throughout.
I looked at this great idea but I felt the sugar was too high for me.I am diabetic, Thanks for the great I only used 1 tbs Brown sugar. I used a single egg to keep Cholesterol down. No salt or topping and it was great will make it often. I am doing the math. It might get to four servings. Thanks!!
Can anyone say Sweet Potato Pie? No evap milk used 3/4 skim 1/4 water. combined potatoes and banana in food processor. Added rest and gave it a good blend. Used pumpkin pie seasoning 1/4t and 3/4 cinnamon in topping. In the oven now - smells amazing - can't wait! Boy was it good.
very good and easy to make. I made mine with egg whites, a little less condensed milk (and made mine with powdered milk and water), a little less sugar (omitted the white sugar on top), added more cinnamon and vanilla - yum! husband couldn't believe there was potato in it!
I made this tonight for dessert. It is awesome. I will be making this again. I put a litle fat free cool whip on top and had it with vanilla spice dessert tea. Next time I may add some walnuts to it but it was excellent as is. Thanks for a great recipe.
No sugar, except tablespoon on the top mixed with sliced almonds and cinnamon and some cake spice, and 1 tsp ground flax. I used Almond milk and betterN'Eggs. No salt, or raisins either. It was a little too plain, so I topped it off with some cool whip free to make up for it. THen ate too much! :)
Great, but left out the raisins as I just do not like them cooked. I will try again with Craisins or golden raisins. Pecans would be good also. my hubby even liked it and he is not a sweet tater fan except as fried sweet taters.
This sounds like a keeper. With some of the suggestions, I hope to play with it myself, and possibly adapt to replace my Thanksgiving pumpkin chiffon pie. In any case, will make this immediately.
I used 1 Tbsp of dark brown sugar in the custard and 1 Tbsp of same in the topping, instead of white sugar. I also increased both the sweet potato and banana amounts, and used two whole eggs. I served it with plain yogurt on top. Interesting taste. I don't know if I'll make it again or not.
Smells great while cooking, I made the recipe as-is for the first try except for the raisins - I don't like them - lol. Will try some of the alternates suggested for the future because this is a keeper.
