Low-carb, high protein pizza



Introduction

From Healthy Indulgences cooking blog--I haven't tried this yet but wanted to see what the nutritionals looked like... ingredients are all healthy anyway. I'm curious to see if it really does serve two. Number of Servings: 2

Ingredients

    1 cup shredded part-skim mozzarella cheese
    1 large egg
    1 tbls golden flax seed, ground
    1 tbls/scoop whey protein powder
    1/2 tsp baking powder

    toppings to taste (for these nutritionals I used one plum tomato and half a cup baby spinach)

Directions

Mix cheese (reserving some for toppings later) with egg, flax meal, protein powder, and baking powder. Spread with a spatula to 1/4" thickness on a baking sheet lined with parchment paper. Bake for 30 minutes at 350 degrees, flipping halfway through the baking process.

Remove from oven, slide off parchment, and flip over again onto the pan so the crust cooks with the pretty side up. Once cooled, top with toppings (chop tomato and spinach, add and sprinkle remaining cheese over, add any seasonings like basil, oregano, red chili flakes) and broil for 2 minutes.
