Chester's Potato Soup (1 cup serv'g)

Ingredients

    * *Potato, raw, 7 medium (2-1/4" to 3-1/4" dia.) (remove)
    * Milk, nonfat, 7 cup (remove)
    * Onions, raw, .5 cup, chopped (remove)
    * *Hormel Bacon Bits, 5.25 tbsp (remove)
    * Flour, whole grain, .5 cup (remove)
    * Country Crock, Shedd's Spread Country Crock Light (Soft), 1 Tbsp, 9.6 serving (remove)
    * Kraft 2% Milk Mexican Four Cheese Shredded, 0.75 cup (remove)
    * Salt 1 tsp
    * Pepper to taste
    * 1 Tbsp of Lemon Juice

Directions

Peel and cube potatoes. In a large boiling pot, combine potato cubes, milk, onions, butter, salt, pepper, and bacon bits. Bring to a boil, then cover and reduce heat to simmer. Stir frequently to avoid scorching. Cook until potatoes are fork tender. Combine flour with 2/3 cup water in a cup stir into a paste (rue), then add to pot and stir until it thickens. Add lemon juice and cheese, and stir until that melts. Simmer 5 more minutes, then remove from heat and serve. Serving size 1 cup of soup.
