*Egg substitute, liquid (Egg Beaters), .5 cup
*Whole Wheat Flour, 2 cup
*Granulated Sugar, .5 cup
*Baking Soda, 1 tsp
*Cinnamon, ground, 1 tsp
*Salt, .5 tsp
*Applesauce, unsweetened, .1250 cup
*Buttermilk, lowfat, 1 cup
*Jams and preserves, sugar-free, .5 cup
*Nutmeg, ground, 1 tsp
*Make a well in the center.
*Whisk together eggs, applesauce, buttermilk and jam.
*Pour all at once into the well. Stir just until dry ingredients are moistened. Do not overmix.
*Place in greased muffin tins. Bake at 375 for 20 minutes or until done. Yield: 15 muffins.
