Spicy Lamb Stew

Ingredients

    1 lb boneless leg of lamb, trimmed of fat and cut into 1" chunks
    1 onion, chopped
    Garlic, 3 cloves
    3/4 lb new potatoes
    2 carrots, cut into 1" chunks
    1/2 tsp Hungarian Hot Paprika
    1/2 tsp Paprika
    1 tsp oregano
    14 oz can low sodium chicken broth
    1 tbs balsamic vinegar
    1 bay leaf

Directions

1. Spray a dutch oven with nonstick olive oil spray and set on medium-high heat. Add lamb and cook until browned.
2. Add onion and garlic. When onion begins to soften add potatoes, carrots, paprika and oregano. Cook until fragrant.
3. Add broth, vinegar and bay leaf. Bring to a boil. Reduce heat and simmer, covered for 30 min or until vegetables and lamb are tender.

Makes 4 - 1 1/2 cup servings.
