BBQ Baby Jackfruit

Introduction

This is a delicious vegan alternative to pulled pork, found on http://chowvegan.com/2008/05/28/bbq-pulled
-jackfruit-sandwich/. Canned young green jackfruit in brine is unripe, and what you want for this recipe. It’s prepared as a vegetable and is also known as “vegetable meat”. Don't get the ripe kind!

This also needs time to sit and marinate after cooking, so make it a day ahead of time. You will not like the flavour after immediate cooking.

Ingredients

    4 cloves garlic, minced
    1 tsp grated ginger root
    1/4 cup water
    20 oz green jackfruit (in brine or water), drained and rinsed well, squeezed of extra water
    pinch ground chipotle pepper
    1/4 tsp liquid smoke (optional)
    1/2 tsp fine salt
    1/2 cup low-sugar BBQ sauce
    1/4 cup water

Directions

Heat a non-stick pan over medium-high heat.
Add garlic, ginger and water and sauté for 1-2 minutes, until liquid evaporates.
Add the jackfruit, chipotle, liquid smoke and salt.
Cook, stirring, for 4-5 minutes longer.
Transfer the pan mixture to a slow cooker, add the BBQ sauce and water, and toss well.
Cook on HI for 1 hour, stirring every 15-20 minutes and adding more water as needed.
The jackfruit should be fork tender.
Take the jackfruit out of the cooker and shred.
Transfer to a covered container and allow to sit in the refrigerator 12 hours before reheating and serving.

  • Love this recipe!! You will fool your meat-eating friends. I like to finish it off after the slow cooker in the oven or in a foil pan on a grill. Just to give that "burnt ends" feel to it, makes it extra chewy. - 4/1/12

  • I drain jack fruit, let it sit in clear water overnight in fridge. mash with fingers. rub well w/ garlic, chopped onion, your seasonings. BBQ, or: salsa & Dijon, tomato paste, 1/4 cup white wine, or balsamic vinegar, etc. Tweak like Chili. In slow cooker 2 hrs. Turns dark. EAT!Tortillas? - 6/20/11
