Easy Chicken Pot Pie

Introduction

If you prefer to make your own baking powder biscuits,as I do, they taste wonderful on top in place of the canned ones. I make them a bit runny so that they form a nice crust over the top. Healthy Request soups are usually low in sodium, so you may have to adjust the salt and pepper to taste. Number of Servings: 8

Ingredients

    One can of biscuits, you will need about a dozen to cover the top.
    One package of traditional mixed vegetables.
    One can of Healthy Request Cream of Chicken Soup, mixed with one can of skim milk.


Directions

Cook the chicken breasts almost through in a pan prior to cutting into bite size pieces. ( They will cook the rest of the way in the oven.)
Mix the chicken in a 9 x 12 casserole pan with the veggies and the soup.
Place the biscuits on top to form a crust. It's ok to have some spaces as long as everyone gets a biscuit. Bake at about 375 degrees until the biscuits are browned around the edges and the filling is bubbling, usually about 20 mins.
Makes 6-8 servings
