Italian mushroom sandwich

Introduction

I liked this for a fairly quick easy lunch. You gotta like mushrooms or it isn't gunna float your boat. You could also reduce the calories if you made this one open faced and just melted the cheese on the top. I liked this for a fairly quick easy lunch. You gotta like mushrooms or it isn't gunna float your boat. You could also reduce the calories if you made this one open faced and just melted the cheese on the top.

Ingredients

    5 medium sized mushrooms (I used Kramini)
    2 tsp olive oil
    1 tblsp chopped onion
    Mrs Dash garlic herb (to taste)
    2 slices whole wheat bread
    1/4 c. pizza sauce (contadina pizza squeeze is what I had)
    Non stick cooking spray

Directions

In a med skillet saute the mushrooms and onions in olive oil, sprinkle in the Mrs. Dash. Cook until tender. Remove from pan and spray pan with Non stick spry. Spread 1/2 of the pizza sauce on 1 slice of bread and place in hot skillet sauce side up. Add the mushroom mixture to bread and sprinkle with cheese. Use the other 1/2 of sauce on the 2nd slice of bread and place sauce side down on the sandwich. Cook until bread is nicely browned and then flip and brown other side. (before flipping I sprayed the pan again to help with the browning).
