Pasta salad with Tomatoes, black beans and corn

Submitted by: LAURA2BZ

Introduction

This is something I just threw together one day. It was such a hit, I added it to my family's favorites. We sometimes add chicken and make it a main dish. It is a great dish to take to a pot luck too! This is something I just threw together one day. It was such a hit, I added it to my family's favorites. This was very good but if you make it as a main dish you really only get about 4 servings (about 2 cups each) so that makes it around 500 calories. Still not too bad for a tasty, filling and healthy meal. - 6/28/09

This was the perfect recipe for the tomatoes and corn on the cob I bought at the farmers market. I didn't use cherry tomatoes because I think that they would take away from the rustic taste. Also, I used homemade tomato sauce so that it would be chunkier. Very easy to customize and so easy!!! - 9/20/08

  • So easy to make! We added olives (also sliced in half), and used a Southwestern blend of frozen veggies that included both the black beans and the corn in one package (along with some diced red and green bell peppers). - 6/20/10
