Scratch Vegetarian Chili

Introduction

Number of Servings: 8

Ingredients

    3/4 Cup Black Beans
    3/4 Cup Red Kidney Beans
    3/4 CupCannellini Beans
    1 Tbsp Olive Oil
    3 Gloves Garlic
    1 Large white Onion
    1.5 Cups Chupped Green Peppers
    1 28 Oz Can Tomato Sauce
    1 28 oz Can Tomato Puree
    2 Tbsp Cayenne Pepper
    1/3 Cup Chili Powder

Directions

Bean Prep:
Bring 10 Cups water to boil. Rinse the Black, Red, and Cannellini Beans. Add beans to boiling water. Keep heat on for 3 minutes. Remove from heat. Let beans sit in water for one hour.

While beans are sitting:
Chop 1 large white onion and green peppers (will need approximately 2 peppers. Also Mince Garlic.

In large Pot add 1 Tbsp olive oil. When oil is hot add onions, peppers, and garlic. When onions are translucent, add tomato sauce, tomato puree, beans, corn, cayenne pepper, and chili powder. Simmer for 1.5 to 2 hours.

Recipe yields 8 generous servings.
