Spicy Peanut Noodles

Ingredients

    8 oz linguine
    1/3 cup low-fat creamy peanut butter
    2 tbs low-sodium soy sauce
    1.5 tbs rice wine vinegar
    1-2 tbs chile paste with garlic
    .5 tsp sugar
    1 medium sized red bell pepper cut into thin strips
    3-6 cups broccoli florets
    3-6 cups fresh spinach


Directions

1. cook linguine according to package
2. combine panut butter, 1/4 cup water, soy sauce, vinegar, chile paste and sugar in large bowl; whisk until blended. If it seems to thick add more water, should be consistency of a cream.
3. Saute peppers strips, spinach and broccoli.
4. add linguine to vegetable and than mix with sauce.

This makes 6 servings.

    LOVED this! We got 4 servings only because we didn't have the broccoli to add. With spinach and peppers, this was awesome. Used crunchy peanut butter and thin rice noodles to give it more of a "Thai" flavor. Two thumbs up! - 4/8/10

    Had this tonight. Used whole wheat linguine, white vinegar, doubled the chili garlic paste, added red pepper flakes, garlic, cauliflower, and prepared the veggies in a wok. The bf and I really enjoyed this... will definitely make again! - 9/18/09

    To those saying the nutritionals are off...look at the bottom of the recipe...it says "This makes 6 servings".
    This sounds really good! Can't wait to try it. - 2/24/09

    Of the many recipes I've tried on this site, this is far and away my favorite! Boyfriend and I halved the pasta (used whole wheat) and used 8 cups of spinach and 4 of broccoli. So tasty! Next time would steam the broccoli instead of sauteing it and halve the sauce. - 10/13/08

    this recipe's nutritionals are off... if it is truly meant to serve 1 person, you are looking at 1,473 calories, and 38.5 grams of fat - 9/30/08

    I think the servings for this recipe are more like 4 than 1, especially if you use all of the veggies - but it was very flavorful as well as quick and easy. I would definitely make it again. PS: I added water chestnuts and it wasa tasty addition. - 9/15/08

  • Made a few adjustments to this to use what was in my pantry. Used cider vinegar instead and for veggies i used portabellas, onions, carrots, red bell pepper, spinach, and green beans. Also, instead of adding water to the sauce, i used milk to keep it creamy. - 1/13/11

  • This recipe is a definite keeper! Made it last night. Didn't have broccoli or spinach, so threw in 1/2 chicken breast (cut up), 2 zucchini & 2 sliced red bell peppers. YUM!!! Not so sure it would serve 6 - served 4 w/1 serving left over. Already added to the regular meal rotation! - 6/24/10

  • These are so good! I may add a little less crushed pepper (1 t) next time although my hubby loved them as is. We even had the left overs cold for lunch the next day. - 9/15/08
